For those who have never cooked pork liver pancakes, my recipe will come in handy. I will show you. how to cook them so that they are soft. I can safely say that this dish is just a lifesaver for any housewife. Everything is prepared quickly, you can serve pancakes hot to the table, or you can cook them in advance, leave them in the refrigerator and treat them without warming up - even on the second day they will be amazingly tasty! You can use any liver: veal, chicken, turkey - to your taste, it can be cooked both chilled and frozen, but then you will need to let it thaw. It is best if, before frying the pancakes, you soak the liver in cold water to remove excess blood and bitterness from it. If desired, before eating, you can sprinkle pancakes with herbs or put a few lettuce leaves on the bottom of the plate in which you will serve them - in this case, you will get an independent dish. Ingredients:
- 250 grams of fresh liver,
- half a medium sized onion
- 30-40 grams of semolina (or 2-2.5 tablespoons with a slide),
- 1 chicken egg,
- 15 grams of any vegetable oil,
- salt to taste,
- ground black pepper (at the tip of a knife).




How to cook with a photo step by step

We wash the liver in running water.
We cut off all the films and veins, cut into pieces of arbitrary size, so that it is convenient to pass through a meat grinder.
Cut the onion half in half again.
We take a deep bowl, scroll into it with a meat grinder all the pieces of the liver and onions.




We release eggs into the resulting mass, salt, pepper.




Gradually fall asleep semolina. Now beat everything together with a whisk until the mass becomes homogeneous.










We cover the bowl from above and wait until the semolina swells a little (no more than half an hour).
Place a frying pan over medium heat, add oil.
When the oil is hot, take a tablespoon and spread the pancakes to fry.




Fry on both sides, each side will take 2-3 minutes. Ready pancakes from pork liver acquire a delicate golden crust.






Remember to make sure that there is enough oil for frying, add if necessary, otherwise the liver will quickly burn and the pancakes will be bitter.
