  • 200 g boiled sausage
  • 2-3 potato tubers
  • 1 apple
  • 2 fresh cucumbers
  • 1 egg
  • 8 tbsp. l. canned green peas
  • 1 bunch of green onions
  • 100 g mayonnaise
  • 1 medium carrot

Preparation:

  1. Wash the potatoes and carrots thoroughly, add cold water, bring to a boil and cook for 20 minutes. Then drain, let cool vegetables, peel and cut into cubes.
  2. Hard-boiled egg, rinse with cold water, peel and chop finely. Wash the apple, cut into 4 pieces, core and chop finely. Wash the cucumbers, cut off the ends, cut each in half and cut into cubes. Cut the sausage into cubes. Peel, wash and cut the green onions into thin rings.
  3. Mix everything, add green peas, salt, pepper and season with mayonnaise.

2. Pomegranate bracelet salad



You will need:

Serves 4
  • 1 chicken breast fillet
  • 2 onions
  • 150 g hard cheese
  • 1 beet
  • 1 pomegranate
  • 3 eggs
  • 3-4 tbsp. l. mayonnaise
  • 50 g walnuts
  • salt, pepper to taste

Preparation:

  1. Boil the chicken fillet and cut into small pieces, season with salt. Peel the onion and chop finely. Heat a frying pan with vegetable oil and fry the onion until golden brown.
  2. Wash carrots, boil, peel and grate. Boil eggs, peel. Grate eggs and cheese on a coarse grater. Coarsely chop the nuts. Boil the beets, peel and also grate on a coarse grater. Disassemble the pomegranate into grains.
  3. Lay out the first layer of chicken fillet in a circle on a large platter. Spice up. Then put the fried onions and brush with a thin layer of mayonnaise. Then put the carrots, grease with mayonnaise again. Put the next layer of grated beets, then boiled and chopped eggs, coat with mayonnaise, sprinkle with grated cheese and walnuts, again coat with mayonnaise and garnish with pomegranate seeds on top. Put the salad in the refrigerator for 3-4 hours, and preferably overnight.

  • 100 g salted salmon
  • 100 g smoked salmon
  • 100 g iceberg salad
  • 200 g yoghurt
  • 6 eggs
  • 1 lettuce onion
  • 4 potato tubers
  • 1 green apple

Preparation:

  1. Remove small bones from the fish, remove the skin, cut the flesh into thin strips or crumble very finely.
  2. Boil potatoes and eggs. Peel the eggs, separate the whites from the yolks. Finely chop the whites or grate them on a coarse grater. Peel and grate the apple.
  3. Cut the iceberg lettuce into strips, cut the onion into small cubes. Layer in a salad dish with removable sides: potatoes, onions, lettuce, salted and smoked fish, grated apple.
  4. Grease with yogurt on top and sprinkle with protein, and then yolk. Decorate the salad with fresh herbs and serve.

4. Sea salad with shrimps

You will need:

Serves 4
  • 300 g boiled shrimp
  • 1 cucumber
  • 5 potatoes, cooked in their skins
  • 1/2 cup canned peas
  • 1 carrot
  • 1 bunch of parsley
  • 250 ml mayonnaise
  • 1 egg

Preparation:

  1. Peel and dice the potatoes and cucumbers. Grate the carrots. Hard boil the egg, peel and cut into wedges.
  2. Mix all vegetables, add peas and season with mayonnaise and chopped dill. Season with salt and coarse black pepper.
  3. Arrange in bowls, top with shrimps, egg wedges and a few sprigs of parsley.

5. Chicken salad with avocado



You will need:

Serves 4
  • 300 g chicken breast fillet
  • 4 tbsp. l. vegetable oil
  • 2 red chili peppers
  • 1 onion
  • 4 tbsp. l. honey
  • 3 tbsp. l. lime juice
  • 50 g arugula
  • a few radiccho lettuce leaves
  • 1 avocado
  • 50 g roasted peanuts

Preparation:

  1. Fry the fillet in 2 tablespoons. tablespoons of vegetable oil (12-15 min.) Remove the seeds from the chili pepper, then chop and mix with honey. Put the meat out of the pan, grease the 2nd table. spoons of honey sauce and cool.
  2. Chop the onion and sauté in the fat left over from the frying. Then mix with remaining sauce, butter and lime juice. Salt the fill.
  3. Rinse arugula and radiccho, dry and break into pieces. Cut the avocado in half, remove the pit, peel and cut into half rings. Cut the chicken fillet into slices and arrange on plates together with pieces of lettuce and avocado. Drizzle with spicy filling and sprinkle with nuts.

6. Mimosa salad


You will need:

  • 250 g boiled red fish
  • 150 g mayonnaise
  • 100 ml sour cream
  • 4 eggs
  • 2 boiled carrots
  • 2 boiled potato tubers
  • 1 large onion
  • dill sprigs and green onions for decoration
  • salt, ground black pepper

Preparation:

  1. Finely chop the fish and arrange in tins. Mix mayonnaise with sour cream and spread on a layer of fish. Separate the whites from the yolks and chop finely.
  2. Grate the carrots and potatoes separately, chop the onions. Crumble the yolks.
  3. Put the carrots, onions and potatoes in layers in the tins, layering with mayonnaise sauce. Lay the yolks on top, garnish with herbs and put in the cold for 2 hours.

7. Sauerkraut with shrimps


You will need:

Serves 4
  • 1 onion
  • 1 tsp butter
  • 500 g sauerkraut
  • 1 tbsp. l. Sahara
  • 200 ml dry champagne
  • 8 frozen large shrimps
  • 100 g sour cream and cream
  • 1 bunch of chervil

Preparation:

  1. Peel the onion, cut into small cubes and sauté in butter in a saucepan. Throw the sauerkraut in a colander, collect the brine. Put the cabbage to the onion, sprinkle it with granulated sugar. Pour in the champagne, cover and simmer for 10 minutes. over low heat.
  2. Put frozen shrimp in boiling water and bring to a boil. Cook over low heat without a lid for 5 minutes.
  3. To prepare the sauce, pour the sour cream into a saucepan. Add cream, stir and boil until thick. Wash and dry chervil. Tear off the leaves, chop and add to the sauce. Whisk everything well. Pour the sauce into glasses, put sauerkraut and shrimps on top. Garnish with lime slices.

8. Arlecchino salad with turkey curls

You will need:

  • 200 g green peas
  • 100 g red lentils
  • 300 ml broth
  • 4 turkey schnitzels
  • 1 bunch of parsley and chervil
  • 2 tsp mustard
  • 1 tbsp. l. ghee
  • 2 onions
  • 1 bunch of radiccho lettuce leaves
  • 1 mango
  • 5 tbsp. l. vinegar
  • 4 tbsp. l. vegetable oil
  • salt, ground black pepper

Preparation:

  1. Boil lentils in broth (6-8 minutes). Season the meat with salt and pepper. Chop the greens, mix with mustard, put on schnitzels, roll them into rolls and fasten with skewers.
  2. Fry the rolls in ghee (10 minutes). Cut the onion into rings. Tear the radiccho leaves into pieces. Peel the mango, cut into small pieces. Add peas with lentils and mix everything. Cut the rolls into pieces.
  3. Mix the vinegar with the remaining broth, vegetable oil and season the salad. Arrange the salad on plates, put pieces of the roll on top.

9. Crab salad



You will need:

Serves 4
  • 250 g crab meat
  • 2 fresh cucumbers
  • 1 sour apple
  • 1 tbsp. l. lemon juice
  • 1 avocado
  • 3 eggs
  • 80 g red caviar
  • 3 tbsp. l. mayonnaise
  • 2 cloves of garlic
  • salt to taste, herbs for decoration

Preparation:

  1. Remove chitinous plates from pieces of crab meat, spread the pieces on paper napkins and let dry a little.
  2. Wash cucumbers, dry and cut into thin strips. Wash the apple, dry it, peel, cut into strips, sprinkle with lemon juice. Peel and grind the eggs with a blender. Stir in cucumbers, apple, eggs and 1 table. a spoonful of mayonnaise.
  3. Peel and chop the garlic. Wash the avocado, cut in half, remove the pit. Take out the pulp with a tablespoon and grind it with a blender. Mix avocado, garlic and 1 table. a spoonful of mayonnaise.
  4. Put in layers a mixture of cucumbers, apples and eggs, avocados and crab meat in bowls. Put 1 table on top. a spoonful of mayonnaise, garnish with red caviar and herbs.

10. Shrimp and caviar salad



You will need:

  • a head of frize lettuce
  • 250 g green beans
  • 400 g boiled and peeled shrimp
  • 100 g red caviar + for decoration
  • 1 cucumber
  • 1 boiled carrot
  • 2 boiled potatoes
  • 3 tbsp. l. mayonnaise
  • 1.5 tbsp. l. ketchup
  • 1 tbsp. l. cognac
  • salt pepper

It is difficult to imagine a New Year's table without a variety of delicious appetizers. Most often, for this holiday, hostesses prepare an abundance of salads for every taste. They help to diversify the menu and cope with hunger while waiting for a hot meal. The best salad recipes for the New Year are collected below.

Ingredients:

  • 200 - 250 g of boiled sausage without lard;
  • 4 boiled potatoes;
  • 3 pickled cucumbers;
  • 5 chicken eggs, cooked to a firm center;
  • 2 pcs. raw carrots;
  • half a can of peas;
  • salt with mayonnaise - to taste.

Cooking like this:

  1. Boil the root vegetables in their uniform until softened. Cool, peel and chop into cubes. In the process of cooking potatoes, add ½ tbsp to boiling water. pickle from pickled cucumbers, then the vegetable will not boil down.
  2. Cut the sausage into pieces a little larger, removing the film from it.
  3. Chop the boiled and cooled eggs into approximately the same neat pieces. Do the same with cucumbers.
  4. Combine all the ingredients and pour into the peas salad without liquid.

Season the food with salt, season with the selected sauce and stir.

With squid and shrimps

For a quarter kilo of squid and the same amount of shrimp, you will also need:

  • 2 "cool" eggs;
  • mayonnaise mixed with salt and seasoning.

Preparation:

  1. Defrost seafood in advance.
  2. First, scald the squids with boiling water and peel off the foil from them, then cook for 6 - 7 minutes. Cook shrimps in salted water for 3 - 3.5 minutes.
  3. Prepare and chop all seafood. Their pieces should be approximately the same.
  4. Chop boiled eggs arbitrarily.
  5. Mix foods and season a snack.

Korean carrot and pork salad

For a quarter of a kilo of smoked pork, prepare the following products in advance:

  • 1 white sweet onion
  • 1 cup full of zesty carrot strips
  • classic mayonnaise with salt.

Preparation:

  1. Boneless smoked pork is cut into long thin strips.
  2. The onion is peeled and chopped into thin half rings. It must be scalded with boiling water to remove the bitterness. Then put in a colander / sieve to drain the liquid.
  3. If necessary, shorten the long strips of carrots and then squeeze them out of the excess marinade.
  4. Combine all ingredients and season the appetizer with salted mayonnaise sauce.

Carrots for such a recipe can be bought ready-made or made yourself.

With smoked chicken and mushrooms

You will need:

  • 350 g boneless smoked chicken;
  • the same amount of fresh mushrooms;
  • bulb;
  • 4 "cool" eggs;
  • a couple of strong cucumbers;
  • table greens;
  • spices suitable for chicken, salt;
  • fresh cranberries.

Preparation:

  1. The first layer of the snack will be smoked chicken cubes. You can take any other bird instead. You do not need to add salt to the meat layer, but it must be smeared with sauce.
  2. Next, slices of fresh cucumbers with sauce and salt are distributed.
  3. For the third layer, you must first boil any forest mushrooms, and then fry them until tender, along with pieces of onions. Season with salt, add spices.
  4. Roasting is distributed over the cucumber mass and a mayonnaise grid is also drawn on it.
  5. Sprinkle mushrooms with onions with a layer of chopped greens.
  6. The last layer is formed by grated boiled eggs. It is not necessary to sprinkle them with mayonnaise, as this layer should turn out to be "fluffy".

The appetizer is decorated with fresh cranberries. You can take halves of small cherry tomatoes for this purpose.

With red fish and croutons

Ingredients:

  • 150 - 200 g of Chinese cabbage;
  • half an average pack of crab sticks;
  • 100 - 150 g of any lightly salted fish;
  • 50 g of hard cheese;
  • ½ part of the onion;
  • 2 handfuls of white garlic croutons;
  • table salt and pepper mixture;
  • classic mayonnaise / sour cream.

Preparation:

  1. Chop the Chinese cabbage finely. Salt it and knead it with your hands. You need to use only the soft part of the cabbage leaves. Dense, rough areas are best thrown away or added to other dishes.
  2. Selected lightly salted fish and crab sticks must be cut into neat cubes. Part of the onion should also be chopped.
  3. Grind the cheese with a medium or large mesh grater.
  4. Connect everything. Season with salt and pepper.

It is best to season this delicious New Year's salad with mayonnaise / sour cream and sprinkle with croutons. Serve immediately to guests.

New Year's salad "Obzhorka" with beef

Ingredients:

  • 400 - 450 g of beef pulp;
  • 1 onion;
  • 2 pcs. carrots;
  • 2 pickled cucumbers;
  • 1/3 Art. classic mayonnaise with salt;
  • favorite spices for meat;
  • fat for frying.

Preparation:

  1. Pour water over the beef and cook the meat until cooked. Do not salt the water used for cooking, otherwise the meat will be dry.
  2. While the beef is cooking, finely chop the onion.
  3. Chop raw carrots into strips. You can use a special "Korean" grater for this. Chop pickled cucumbers as well. If they have a very dense skin, then it should be cut thinly.
  4. First, fry the onion in hot oil until transparent, then add carrot strips to it. While stirring, fry the vegetables for 8 to 9 minutes. The frying should be slightly browned, but not burnt, otherwise the finished snack will taste bitter. Add spices to it.
  5. Cut the boiled meat into cubes. Mix with cooled roast.
  6. Add cucumber straws to the food and mix everything thoroughly.

Season the treat with salted mayonnaise. Decorate with fresh herbs if desired.

"Royal" with pork and prunes

Ingredients:

  • 200 g of boiled beets;
  • 200 - 250 g boneless pork;
  • 150-200 g of boiled carrots;
  • 1 sweet onion;
  • 150-200 g of boiled potatoes;
  • 2 pre-cooked eggs;
  • 1 tbsp. shredded hard cheese;
  • ½ tbsp. shelled walnuts;
  • ½ tbsp. dried prunes;
  • classic salted mayonnaise.

Preparation:

  1. Boil the pork pulp. Allow it to cool completely and fiber.
  2. Thoroughly peel boiled root vegetables and chop with a medium / coarse grater. If desired, you can not rub the potatoes, but cut them into medium cubes, then it will be better felt in the dish.
  3. Chop small boiled eggs and onions.
  4. Just chop the nuts with a knife. The pieces may not be too small.
  5. Soak prunes in warm water and cut into strips.
  6. Lay out the treat in layers in a special culinary ring: potatoes - meat - onions - eggs - carrots - prunes. Coat all products with salted sauce.

Remove the culinary ring and cover the appetizer with grated cheese and chopped nuts.

Royal style with seafood and caviar

Ingredients:

  • 1 cup full of small shrimp
  • 2 - 3 boiled eggs;
  • 200 - 250 g squid;
  • 200 - 250 g of crab meat;
  • 2/3 st. grated semi-hard / hard cheese;
  • 1 - 2 teeth fresh garlic;
  • 5 dessert spoons of red caviar;
  • classic mayonnaise.

Preparation:

  1. Send the squid carcass to actively bubbling boiling water. Cook for 3-4 minutes over medium heat. To make the product tastier, you can add bay leaves, peppercorns or other spices to the water during cooking.
  2. Chop the boiled cooled seafood into thin long strips. If a film remains on them, it must be removed.
  3. Cook the shrimps in boiling water for 3-4 minutes. You can also add spices to these seafood, let the shrimp cool and peel thoroughly.
  4. Mix seafood. Pour straws of crab meat or regular crab sticks into them.
  5. Mash the garlic and add to the salad. Send small neat cubes of boiled eggs, red caviar, grated cheese there.

Season the appetizer with mayonnaise and you can immediately remove a sample from it.

New Year's salad "Herringbone"

Ingredients:

  • 150-200 g of boiled sausage;
  • ½ tbsp. green peas;
  • 50 g of cheese;
  • 2 boiled eggs;
  • 1 strong fresh cucumber;
  • 1 bunch of dill;
  • classic mayonnaise;
  • salt;
  • cherry tomatoes, a slice of sweet pepper and sweet corn kernels for garnish.

Preparation:

  1. Immediately send small neat cubes of fresh cucumber together with the skin to a common bowl.
  2. Add to it about the same size pieces of boiled sausage (you need to choose a variety without lard), grated cheese, canned peas and chopped boiled eggs.
  3. Salt everything, pour over the sauce and mix well.
  4. Put the resulting salad on a large flat plate in the form of a herringbone with an upper sharp end and a rounded wide bottom end.
  5. Top up the base completely with chopped dill, imitating Christmas tree needles.

Cut a star out of the pepper for the tree. Cherry halves and corn will represent Christmas tree decorations. If you are looking for simple salads for a big feast, then this one is a godsend. It is delicious and looks very impressive on the festive table.

Puff appetizer with chicken liver and mushrooms

Ingredients:

  • 300 - 350 g of chicken liver;
  • 300 - 350 g of peeled mushrooms;
  • 3 boiled eggs;
  • 150 - 200 g of already grated cheese;
  • 4 medium boiled potatoes
  • 2 pcs. boiled carrots;
  • 2 onion heads;
  • oil, salt, mayonnaise, spices that go well with the liver.

Preparation:

  1. Boil all roots until softened. Cool and peel. Rub it.
  2. Boil the eggs until they are firm and chop with a grater too.
  3. Peel the onion, cut into smaller pieces, the mushrooms into slices. Fry them with half the onion slices until tender. Add spices and salt.
  4. With the rest of the onion, fry the liver, cut into small pieces.
  5. Lay out the products: potatoes - roast with mushrooms - carrots - roast with liver - cheese - eggs.

Salt all layers and coat with mayonnaise (except mushroom). Let the treat stand in a cool place.

With Chinese cabbage and cherry tomatoes

Ingredients:

  • 5 - 6 pcs. cherry;
  • 300 - 350 g of crab sticks;
  • 1 - 2 teeth garlic;
  • 300 - 350 g of Chinese cabbage;
  • ½ teaspoon of salt and ¼ teaspoon of pepper;
  • chopped fresh parsley;
  • mayonnaise sauce.

Preparation:

  1. Defrost the crab sticks and only then remove the film from them and cut into medium cubes. It is advisable to choose a juicy product for such a dish.
  2. Chop the washed cabbage with a sharp knife, add salt and mash with your hands until softened.
  3. Finely chop the greens. Mash the garlic. Cut the cherry into 2 - 6 pieces, depending on the tastes of the cook and the size of the vegetables.
  4. Put all the ingredients in a common salad dish. Add the remaining bulk ingredients to them and season with the sauce.

If you prefer lean salads, then use oil as a sauce.

New Year's salad "Malachite bracelet"

Ingredients:

  • 1 large chicken fillet;
  • 4 boiled eggs;
  • 4 things. kiwi;
  • 1 large green apple;
  • 1 carrot;
  • 1 - 2 teeth garlic;
  • 1 dessert spoon of lime juice, salt and mayonnaise sauce.

Preparation:

  1. The first step is to boil carrots, chicken and eggs. Grind the cooled finished products. Grate the vegetable and eggs (whites and yolks separately), cut the meat into medium pieces. Chop the apple finely (without peel and seeds).
  2. Squeeze the garlic into mayonnaise, add lime juice and salt.
  3. Peel and cut the kiwi into equal cubes. Leave one for decoration.
  4. Arrange the fruit with the first layer of the appetizer and brush with mayonnaise sauce.
  5. Sprinkle the other components on top: meat - proteins - carrots - apple - yolks.
  6. Coat the layers to taste during the assembly of the salad with the sauce.

Decorate the finished treat with thin slices of the leftover kiwi.

Sprat snack with corn

Ingredients:

  • 1 bank of sprats;
  • 1 sour cucumber;
  • 2 pre-boiled eggs;
  • 1 tbsp. canned corn kernels;
  • half a bunch of green onion feathers;
  • half a glass of diced cheese;
  • salted mayonnaise.

Preparation:

  1. Remove the sprats from the jar and divide each fish in half. Remove the bones, cut off the tails, and finely chop the remaining parts.
  2. Ingredients:

  • 300 - 350 g of canned pineapple;
  • 1 tbsp. canned corn kernels;
  • 200 - 250 g pork / chicken ham
  • 4 pre-boiled eggs
  • a few lettuce leaves;
  • 2/3 st. salted olive mayonnaise.

Preparation:

  1. Cool and peel pre-boiled eggs, chop them into neat cubes. It is not necessary to divide the eggs into yolks and whites before grinding.
  2. Put the pineapples in a colander. When the syrup has drained, cut the fruit into miniature pieces.
  3. Remove canned corn from the marinade. If desired, both canned food can be additionally rinsed under running water. Then the sweet note will not be felt in the salad.
  4. Cut the ham into cubes. No need to grind, the meat should feel good in the salad.
  5. Lay out the future snack in layers. To make it more flavorful, you can use the culinary ring.
  6. Ingredients:

  • 1 tbsp. boiled beans (you can take canned beans);
  • 1 PC. bell pepper;
  • 1 red onion;
  • ½ lime;
  • 1 small chili pod
  • 2 - 3 cloves of garlic;
  • 1 small bunch of cilantro / parsley
  • 4 dessert spoons of olive oil;
  • garlic salt to taste.

Preparation:

  1. Peel the bell peppers from the seeds. Cut the remaining pulp into cubes or sticks.
  2. Mash the garlic and mix with the herbs torn by your hands, oil and garlic salt.
  3. Cut the chili without seeds into very small pieces. On the other hand, chop the onion coarsely.
  4. Combine the ingredients, add the beans to them and sprinkle the appetizer with lime juice.

Season the resulting appetizer with the sauce from the second paragraph. For those who prefer light salads as a main course, you can complement it with boiled / baked chicken.

Most of the salads described above are dressed with classic mayonnaise. It is this ingredient that makes the snack high-calorie and non-dietary. But if you wish, you can replace the fat sauce with light unsweetened yogurt, medium or low fat sour cream. Oil-mustard dressing goes well with almost any salad.

I must say right away that there are a lot of delicious salads for the New Year, so you need to choose in accordance with the tastes of your family - for example, my dad will not touch any salad with fish, and naturally, my mother practically did not cook such salads, but was looking for other New Year's recipes ...

If you collected recipes for delicious New Year's salads for the 2017 holiday, then you probably had a desire to cook something familiar and familiar - for example, Olivier or aspic.
