Special recipes for pancakes for gastritis patients. Healed ulcer: nutritional rules Pancakes are possible with 12 duodenal ulcer

Update: October 2018

Diet for stomach and duodenal ulcers is an obligatory component of complex therapy, which does not lose its relevance even at the stage of stable remission. Also, such a diet in parallel with treatment is recommended for patients with gastritis and stomach ulcers associated with Helicobacter pylory.

Patients with stomach ulcers are assigned a special diet - table No. 1. Diet table No. 1 has 2 modifications: No. 1A and 1B:

  • 1A - strict food with limited calorie intake, prescribed in the first 14 days of exacerbation of acute or chronic gastritis, ulcerative
  • th disease, as well as 7 days after surgery on the stomach (i.e., this diet is prescribed after a perforated stomach ulcer). It involves the use of all dishes in liquid, puree and mushy forms, frequent meals 6-7 times a day. Excluded vegetables and fruits in any form, as well as bread (even from the list of permitted).
  • 1B - a gentle diet after completing table 1A with an increased calorie content. Dishes are liquid or mushy, food 5-6 times a day, vegetables, fruits and bread are prohibited.

After stabilization, you can slightly diversify the menu from the list of permitted products.

General principles

Already on the basis of the principles of medical nutrition, you can adjust the diet and stop the progression of the disease. The basis of the diet is:

  • A balanced diet. Diet does not mean starvation: the menu must be balanced, have an energy value of at least 2800-3000 kcal / day: 100 gr. protein, 100 gr. fat, 400 gr. carbohydrates.
  • Fractional food. The maximum break between meals is 3 hours.
  • Last meal - 2 hours before bedtime. You can drink warm milk for sleep.
  • Small portions. The approximate volume is palms folded in a handful.
  • Diet cooking methods. Baking, boiling, steaming, blanching.
  • Shredding . The priority is crushed, grated dishes that are easier to digest and absorb.
  • The temperature of the dishes is about 30-40 degrees. Hot and cold food is unacceptable because it inhibits enzyme formation and slows down tissue repair.
  • Normalization of the drinking regime... Increase in daily consumption of pure water up to 1.5 liters.
  • Limiting salt to 5-10 grams. per day, which irritates the gastrointestinal mucosa, retains fluid in the body. Although in many diets it is written that salt can be consumed up to 12 grams. per day, but the less the better.

To reduce the secretion of digestive glands during remission, carbonate and sulfate mineral waters with a mineralization level of 2-6 g / l are recommended: Borjomi, Essentuki. They consume it without gas, warm, quickly.

Principles:

  • Mechanical and chemical sparing: selection of foods eaten at one meal, exclusion of food that activates digestive secretion.
  • Zigzag food... The introduction of foods from the prohibited list (within reasonable limits) for short periods of time, followed by a return to the diet menu. It is used individually only in patients with stable remission, it is a kind of training for the gastrointestinal tract.
  • Individuality... Unified nutritional principles are the basis on which to rely, but individual parameters must be taken into account: stage, location of ulcer localization, age, patient's body weight, concomitant diseases.
  • Time tracking for food digestion... Data on the digestion time of each dish can be found online. For example, 1 glass of broth lasts about 1.5 hours in the stomach, meat - about 3 hours, legumes - about 5 hours.

Banned fried, only boiled, baked or stewed.

How long does it take to diet?

A strict diet for stomach ulcers must be followed during an exacerbation for 2 weeks (see below for more details). At an early stage of recovery, the goal of the diet is to accelerate the recovery of the gastric mucosa, and in the future - to prevent relapse. Further, a sparing diet must be followed for at least one year after the last exacerbation of the disease, but it is better - all life.

Permitted and prohibited foods with diet number 1

A patient with a stomach and / or duodenal ulcer should remember this table: permitted foods will contribute to the speedy regeneration of the mucous membrane, one might say, help the main therapy, while prohibited foods will negate treatment with the most effective and expensive drugs. The list of permitted foods for a diet is quite wide.

Allowed Products Prohibited foods
Low-fat meat soups in secondary broth. Broth meat: chicken, beef, other dietary varieties. Milk soups with allowed cereals or pasta. Viscous cereal soups. Soups with vegetable broth. Puree soups.

Rich meat, fish broths (first boiled) and first courses, sauces, gravies based on them.

During the exacerbation period, soups with meat and fish broth are prohibited.

Wheat flour bread is stale (a day or more after baking). Rye bread.
Small quantities of unleavened pastry made from unleavened dough. Acceptable filling: apples, fish, lean meat, cottage cheese. Rusks, unsweetened cookies. Baking.

Is it possible with a peptic ulcer ...

Drink soda?

Many patients take baking soda to relieve heartburn and discomfort. Soda is able to neutralize the effect of hydrochloric acid, which is produced in large quantities in case of peptic ulcer disease. But - a vicious circle arises: as soon as the soda leaves the stomach and enters the duodenum, the body produces a new portion of acid in even greater quantities. In addition, when soda interacts with hydrochloric acid, carbon dioxide is produced, which inflates the walls of the stomach, and this is the danger of perforation. Therefore, soda is prohibited.

Smoking?

Smoking is prohibited in case of ulcers, since tobacco smoke has an irritating effect on the digestive tract and provokes an increase in the symptoms of the disease - pain, belching, heartburn. Nicotine enters the stomach and with saliva, slows down ulcer scarring, inhibits regeneration, and also irritates the mucous membrane and intestines just like food, i.e. activates the production of pepsin, hydrochloric acid. If the stomach is empty, the mucous membrane will suffer from the aggressive action of gastric juice. If you smoke on a full stomach, the activity of the digestive glands, motor function will also increase, which leads to the release of gastric contents into the esophagus, especially in people with cardiac insufficiency. A sad statistical fact - smokers suffer from this disease 5 times more often than non-smokers.

Smoking an electronic cigarette?

The e-cigarette, which is marketed as safe, is also banned. Patients who do not adhere to this advice will agree that “smoking safely” results in heartburn, belching, dryness and sour taste in the mouth. The steam that occurs when smoking is by no means so safe and contains many harmful substances (and as the studies of Japanese, American scientists claim, and carcinogens). Harmful chemicals are deposited in saliva and enter the stomach when swallowed.

Drinking alcohol?

Some people claim that vodka, brandy, and other spirits can speed up the healing of stomach ulcers and reduce pain. However, doctors are categorical in this matter - alcohol is prohibited. Any alcohol, be it a 20-year-old whiskey or cheap brandy, increases inflammation in the gastrointestinal tract, increases the acidity of gastric juice, and slows down motor function. Alcohol often becomes a cause of exacerbation of the disease and a provocateur of gastric bleeding.

Cheese

A healthy dairy product with a large amount of protein, calcium can be introduced into the diet at the stage of remission. Unleavened cheeses with a fat content of about 15% are allowed: ricotta, feta, Arla Oltermani, Viola Polar. But fatty cheeses are prohibited.

Kefir

The fermented milk product is rich in amino acids, vitamins (water and fat-soluble), enzymes, macronutrients and minerals, therefore it has a high value for the body, is quickly absorbed by the digestive system (3 times faster than milk). In the stage of stable remission, you can drink kefir: fresh, not sour (for example, for children), slightly warmed up, no more than 1 glass per day. In the acute period, kefir is prohibited.

Milk

Without exaggeration, milk can be called the number one product for peptic ulcer disease. Milk envelops the stomach lining, relieves pain and discomfort, and also eliminates heartburn. Pasteurized, low-fat cow's milk allowed. Nutritionists also advise patients to drink goat's milk without heat treatment, but first dilute it with boiled water in half.

Butter

You can add oil to dishes, the main requirement is natural and fresh. With butter, the recommendation about low-fat dairy products is not relevant: you just need to buy high-quality high-fat butter (82.5%), but use it as an additive in porridge in limited quantities. But inexpensive, low-fat oils most often contain a milk fat substitute.

Sea buckthorn oil

This useful product can be purchased at the pharmacy. Sea buckthorn has a pronounced anti-inflammatory and regenerating effect, accelerates the healing of ulcerative defects and gently envelops the mucous membrane. You can take 1-2 tbsp. sea \u200b\u200bbuckthorn oil per day, before meals.

Eggs

Chicken eggs are on the list of foods that you can eat: protein is rich in low-calorie fats, proteins, amino acids and is quickly absorbed by the body. The yolk is rich in vitamins (D, E, A, B) and minerals and emulsion fats. During the period of remission, you can use 2 pcs. eggs a day (D-0) soft-boiled or as a steamed omelet. Raw eggs on an empty stomach are also useful - they create a protective film on the gastric mucosa, but doctors do not recommend this option, since there is a high risk of contracting salmonellosis. Quail eggs are no less useful, which suppress pain, relieve inflammation, are completely absorbed by the body, and have an antibacterial effect. The recommendations for use are the same, 4-5 quail eggs can be per day.

Tea

During the period of remission, you can use weak black, green tea with milk, herbal (if there is no allergy), you can use herbal teas from the pharmacy, which are called stomach teas. Strong black tea is rich in theophylline, which activates the production of hydrochloric acid, i.e. increases acidity and you cannot drink strongly brewed.

Coffee

People who cannot imagine their life without an invigorating fragrant cup will have to give up coffee (natural and instant) if a stomach ulcer is diagnosed. A hot drink irritates the stomach lining and intensifies existing inflammation. Coffee is loaded with chemicals that increase hydrochloric acid levels. Immediately after drinking coffee, heartburn occurs, drawing pain in the stomach. In the stage of stable remission, when the ulcer has already healed, you can drink natural coffee with milk 1 time in 7-14 days, but not on an empty stomach. An alternative option is chicory, but, again, only with the permission of the gastroenterologist.

Nuts and seeds

Seeds, nuts, rich in vitamins, minerals, unsaturated fatty acids, are prohibited in any period of the course of the disease: they irritate the stomach wall, cause heartburn and take a long time to digest. In addition, hard pieces injure the mucous membrane.

Bananas

The fruit is included in the list of permitted and even recommended foods. Banana pulp envelops the stomach lining, improves digestion, reduces acidity, and has a high nutritional value. Some researchers argue that banana contains a substance that is detrimental to Helicobacter pylori. Bananas must be ripe, preferably chopped.

Cabbage

White cabbage, including early cabbage, is contraindicated because it contains indigestible fiber, increases gas formation, irritates the mucous membrane, and slows down healing. But cabbage juice during remission is possible and even necessary!

Beets

The vegetable is rich in indigestible fiber, contains a number of natural acids that raise the pH of gastric juice. You can not use beets in the acute period, but during the period of remission it is possible, not much. There is evidence of the benefits of beetroot juice, which can be carefully included in the diet, diluted with water 1: 1 and in a small amount, first let it stand for 3 hours.

Pepper

Both hot and bell peppers are prohibited. Everything is clear about hot, but sweet pepper contains a substance with an irritating effect - the alkaloid capsiacin. Pepper also provokes the production of hydrochloric acid.

Cucumbers

Most experts unanimously prohibit cucumbers in any form both during an exacerbation and during a period of remission, since they increase acidity. But in the absence of increased acidity during the period of remission, you can eat young fresh cucumbers without a skin in a chopped form, for example, grated on a coarse grater, no more than 200 gr. per day.

Onions, garlic, ginger, wild garlic, other spicy vegetables and herbs

All this is strictly prohibited, since it has an irritating effect and can provoke an exacerbation, enhances the activity of the digestive glands, activates the production of hydrochloric acid and increases appetite. Some doctors allow patients to add spicy vegetables to their diet after steaming or boiling, but everything is purely individual.

Pancakes, dumplings, dumplings, pasta

Unfortunately traditional Russian pancakes are not allowed. Only one dough for making pancakes consists of several components, and they are fried in oil, which means that the dish is prohibited. If you bake pancakes in a dry frying pan, the dish will not become dietary. Dumplings are a mixture of fatty meat and dough, difficult to digest and heavy, i.e. they cannot be without reservations. Dumplings are also not desirable, an exception is from unleavened dough with light curd or apple filling. As for pasta, finely chopped boiled noodles are allowed.

Sweet

Sweets, chocolate, caramel, sweet dragee, confectionery baked goods, baked goods, oriental sweets are in the category of prohibited. All these are solid harmful carbohydrates that make it difficult to digest, increase the production of hydrochloric acid, digestive juice, and irritate the digestive tract. In the future, they provoke vomiting, heartburn, pain.

Sugar

You should limit sugar in the diet to the maximum. It is an easily digestible carbohydrate that reduces the absorption of B vitamins.

Dried fruits

Everyone's favorite dried apricots, raisins, prunes, dates are rich in organic acids that provoke an exacerbation of the disease and are prohibited in whole form. In the period of stable remission, sometimes you can add soaked, or better boiled prunes, dried apricots in porridge (2-3 pcs. Per serving).

Fruits and berries

During the period of remission, you can use non-acidic ripe fruits and berries in a grated form and without a skin: raspberries, strawberries, apples, pears, bananas, limitedly sweet plums, persimmons. But given the fact that they still provoke the secretion of the digestive glands, it is better to eat them after heat treatment - baking or in the form of jam, preserves.

On the Internet you can find a lot of articles in which not everything is so strict, the scope of the diet is expanded. BUT:

  • At first

everything is individual, only the doctor chooses the diet for the patient. For example, it is impossible to compare the state of the stomach in a patient with a history of peptic ulcer disease more than 20 years ago, successfully treated and healed, and in a person who experienced an acute period a few months ago. If the first can already have a lot of what a healthy person eats, then in the second an innocent piece of barbecue can aggravate and negate the result of treatment.

  • Secondly

the stricter, the more carefully the diet is followed, the less chance of developing gastrointestinal diseases. Let's say the ulcer is healed, a year has passed since the diet No. 1. But this is not a reason to "go into the gap." People with a history of gastric or duodenal ulcers tend not only to relapse, but also to develop gastritis in other parts of the stomach, oncology and other gastrointestinal diseases.

As never before, the proverb “God protects the man who is careful” is relevant, it is not worth having a feast with friends of the subsequent 2-3 weeks of treatment in a hospital!

Products that have a healing effect

There are three products available that have a therapeutic effect.

  1. Fresh potato juice. A simple superfood to treat. It has regenerating, wound healing, analgesic, anti-inflammatory effects. Also, potato juice destroys the pathogenic flora that is present in the stomach. Juice is made from fresh, high-quality potatoes and is drunk immediately. It is taken outside the period of exacerbation, half an hour before meals, for 3 weeks in a row. Volume: start with a few spoons, bring up to 150 ml per day. Best taken diluted with water, 1: 1.
  2. Low fat milk... It envelops the walls of the stomach, protects the organ from the aggressive action of foods and gastric juice, accelerates the regeneration process, dulls or even relieves pain.
  3. Honey. A small amount of honey can be eaten every day: the product is rich in trace elements, vitamins, has a beneficial effect on the entire digestive tract. As for the ulcerative process, honey helps to relieve inflammation, reduces secretion, neutralizes the effect of hydrochloric acid, and relieves pain. Honey reduces nausea and heartburn, inherent in the disease, increases the level of hemoglobin in the blood.
  4. Fresh cabbage juice. Contains a stable form of ascorbic acid and anti-ulcer vitamin U. The juice has been proven to accelerate wound scarring and against Helicobacter pylory.

They can be included in the list of dishes, the only reservation is about cabbage juice: you can drink it freshly prepared, diluted with water (1: 1), no more than 100 ml at a time, 2-3 times a day. The most important thing is only during the period of remission!

The menu for stomach ulcers is developed by the doctor, taking into account the severity and characteristics of the disease. The given menu is the basic one, on which they rely when drawing up the main menu. Recipes for each dish can be found online.

Diet during exacerbation

As we have already said, the diet for exacerbation of stomach ulcers is table 1A, and then 1B (Pevzner tables).

Diet number 1A

Diet for the acute period of the ulcer, which will have to be observed for 1-2 weeks. If we are talking about an exacerbation of gastritis, the diet is followed from 2 to 7 days. Be sure to comply with bed rest. Objectives:

  • reduce the severity of the inflammatory process;
  • accelerate the recovery of the gastrointestinal mucosa;
  • reduce the excitability of stomach receptors.

The diet during the period of exacerbation is very gentle, the basis of the diet is mashed dishes and products boiled in water or steam (also mashed or porridge, mashed). The food temperature is 30-40 degrees. The calorie content of the menu is reduced to 1800-2000 Kcal per day by reducing carbohydrates to 200 grams, proteins to 80 grams. (65-70% of animals) and fats up to 80 gr. (20% vegetable). It is better to exclude salt completely (maximum - 8 grams per day).

In case of exacerbation, give preference to boiled porridge, low-fat meat and fish soufflé, mashed potatoes, steam omelets.

Here are the permitted dishes. And everything that is not permitted is prohibited, and strictly and without reservations.

Allowed meals:

  • mucous soups, cereal (pureed) or milk, flour soups;
  • 5% porridge in water / diluted milk, you can - from crushed cereals for baby food (buckwheat, rice, semolina);
  • minced lean meat in the form of steam soufflés, mashed potatoes (from rabbit, veal, chicken and skinless turkeys);
  • lean fish (soufflé, mashed potatoes);
  • sweet juices from non-irritating fruits, diluted 1: 1 with boiled water;
  • scrambled eggs;
  • curd soufflé;
  • steam omelet;
  • tea with milk is weak;
  • sweetened rosehip broth;
  • a small amount of butter in dishes;
  • vegetable oil;
  • milk - as an additive to dishes;
  • milk jelly;
  • pureed vegetables in dishes (in soup), for example, from baby food jars. Please note that vegetable dishes and side dishes are excluded;
  • decoction of wheat bran.

Diet number 1B

Appointed immediately after the completion of table 1A. Observed for a period determined by the doctor, usually 1-2 weeks, then they go to table number 1. The ingress of irritants into the gastrointestinal tract is also limited. The energy value is brought to 2900 Kcal, only carbohydrates are reduced to 300 grams, the amount of proteins and fats - 90-95 grams per day.

Pros and cons of diet number 1

From a medical point of view, the diet has no disadvantages. Gastroenterologists recommend it for various diseases of the gastrointestinal tract - as practice shows, such a diet reduces the load on the digestive system, speeds up recovery and improves well-being. The correct diet allows you to take control of the disease, i.e. fully live with a chronic illness and minimize drug therapy.

A very conditional disadvantage is the fact that certain foods and drinks need to be abandoned, but patients who have at least once experienced an exacerbation of an ulcer due to a breakdown in the diet and have learned all the "charms" of this condition can easily make the right choice. Of course, you will have to cook for yourself separately from the whole family, think over the menu and diet, but this is a profitable business: 2-3 weeks, and such food will become the norm!

Duodenal ulcer today is not a rare disease, since most of its prerequisites are directly related to the current rhythm of life. This is an excessive addiction to alcohol and nicotine products, and constant stress and nervous shocks, and a disturbed daily routine, including the schedule of meals.

Unfortunately, such people are able to catch themselves only at the last moment, when everything has gone too far. And therefore, only when the situation is brought to an extreme point, the search for a painless solution to it begins. Diet for the duodenum is one of the simplest and most effective options, allowing you not to come to the stage when food begins to be administered intravenously. She is able to do at least half the battle, slowing down the development of the disease, starting the restoration of the mucous membrane and relieving the patient's condition.

It should be prescribed by a medical specialist who takes into account all the nuances of the patient. But if you need to wait a few days before going to the doctor, and you feel on the edge, you should study the information below. It will not replace a doctor's consultation! But it will help you not to hurt yourself even more.

The basic principles of the diet for duodenal ulcer

The main task of such a diet for the duodenum is to reduce the amount of mucosal irritants in your diet. That is, not to provoke new exacerbations and to enable the diseased organ to return to normal functioning. For this reason, the following products are prohibited:

  • Any spicy and smoked dishes, as well as pickles and canned food, marinades.
  • Food is too hot: its optimum temperature is up to 60 ° C.
  • Alcohol and strong coffee.
  • Pork and beef lard, as well as fatty pork, lamb fat.
  • Any fried food.
  • Mushroom and rich meat soups.
  • Sausages, wieners, bacon.
  • Butter dough, ice cream, confectionery.
  • Citrus fruits and sour berries.

It should be remembered that all food is cooked by steam or by boiling. Baking and stewing are not allowed. In addition, the products must be chopped into a puree mass, and the most liquid soups and cereals must be prepared. All this helps to reduce the load on the digestive tract.

Also, be sure to eat every three hours, but not in too large portions. Only until the feeling of hunger is eliminated. Thus, in a day, about eight meals can be obtained. Drink up to 2 liters of liquid per day, moreover, the water must be warm.

During an exacerbation of a duodenal ulcer, the diet involves the use of only well-boiled cereals (any except millet), as well as low-fat mashed soups: vegetable, chicken. Steamed omelettes, soft-boiled eggs are allowed. Decoctions of herbs and berries: for example, rose hips, raspberries.

As the condition improves, it is permissible to gradually include in your diet steam crushed minced chicken, as well as low-fat and pureed cottage cheese, various purees: fruit and vegetable. Apples and celery are especially good here.

The daily caloric content of the diet can be up to 3200 kcal, where 450 g are carbohydrates, 100 g are proteins, and 110 g are fats. Also, the amount of table salt per day should not exceed 12 g.

What food to follow after a duodenal ulcer?

In the recovery period, when the acute stage has passed, a certain diet is also required. The duodenum will be vulnerable for another 8-12 months, and therefore you should play it safe so as not to cause a relapse.

The key rules in the diet after a duodenal ulcer are no different from those already mentioned. But they have a number of additions, mainly related to the permitted products and the consistency of the dishes.

  • Non-liquid and non-mushy foods are allowed, which still need to be thoroughly chewed. Regardless, large chunks are still not allowed.
  • Steam cutlets and meatballs from chicken or low-fat minced fish are introduced into the menu. You can use boiled chicken fillet, beef stroganoff.
  • The diet should also include a dairy group of products with a low percentage of fat. The milk itself is best served warm.
  • You can have dessert dishes - puddings and soufflés, as well as jelly and jelly based on natural fruit juice.
  • From flour products, only dried wheat or whole grain bread is allowed.
  • Carbonated drinks are not allowed, but it is worth consulting your doctor regarding alkaline mineral water.

Specialists recommend paying special attention to oatmeal and barley porridge, as the most suitable cereals for treatment. Among fruits and berries, strawberries, blueberries, apples deserve attention. Spinach and kelp are good. But if the condition worsens, you should refuse to take any of the products, even if it is on the "white list". The individual reaction of the body cannot be discounted.

Diet recipes for duodenal ulcer

It will not be superfluous to bring a few simple recipes for a diet for duodenal ulcers, some of which are permissible in any of the periods of the disease, and the other part is suitable at the time of recovery.

For example, milk rice soup has worked well for moments of aggravation, since it has the property of enveloping the mucous membrane, and also quickly saturating without the effect of gravity. To prepare it, you need a glass of whole milk and about 25 g of round grain rice. First, the cereal is thoroughly washed and boiled until it is completely soft. The water is then drained and replaced with milk. The dish is brought to a boil, cooled down and served.

For people suffering from stomach ulcers, diet is essential. Special nutrition will help avoid complications and exacerbations. A similar effect is achieved by limiting the diet of foods that irritate the mucous membrane, poorly digested and cause increased gastric secretion, as well as adherence to dietary rules that reduce the load on the gastrointestinal tract.

8 nutritional rules for stomach ulcers

  1. Chew all food thoroughly. Eat and enjoy the process.
  2. Do not eat while reclining or lying down. You should eat while sitting or standing, with your back straight and your shoulders straight.
  3. Try to drink at least 2 liters of fluid a day. It can be water, weak tea, rosehip infusion, non-acid fruit drinks, juices or compotes.
  4. Don't starve. The menu for stomach ulcers should consist of 3 main meals and 2-3 snacks.
  5. Do not pass it on, try to eat small portions so that when you get up from the table, you feel a slight feeling of hunger.
  6. There should be meals at room temperature or slightly warmer. Hot or cold must be discarded.
  7. Try to eat most of the food pureed. It is recommended to steam it, bake, stew or boil it. Remove the crust from baked dishes.
  8. Limit salt intake to 10 grams. in a day.

Features of the diet for stomach ulcers

A diet for an ulcer provides for the rejection of fatty, salty, spicy, coarse fiber and smoked foods. The diet should contain food that thermally, chemically and mechanically does not damage or irritate the walls of the stomach.

Prohibited foods
